How long does it take to cook short ribs in a pressure cooker?
Instapot beef ribs take 35 minutes on High pressure to cook. This is after searing the beef for a few minutes on each side. Altogether, this stew recipe will take you under an hour to make.
Can I use bone-in short ribs?
Yes! Increase the pressure cooking time by 1-2 minutes if using bone-in ribs.

Instant Pot Beef Short Ribs Stew (Beer Braised)
Our Instant Pot Beef Short Ribs Stew recipe makes it so easy to cook up delicious beer braised short ribs in under an hour.

- 2 Tablespoons olive oil
- 2 pounds boneless short ribs cut into 1½-inch pieces
- 2 Tablespoons butter
- 3 cloves garlic minced, or 3 teaspoons garlic paste
- 2 onions diced
- 3 carrots peeled and cut into bite size pieces
- 2 Tablespoons tomato paste
- 5-6 red potatoes cubed
- 24 ounces dark beer 2 bottles; or red wine, if preferred
- 2 cups beef stock
- 1 Tablespoon Worcestershire sauce
- 2 sprigs fresh rosemary
- 2 bay leaves
- 1 teaspoon fresh parsley chopped
- Salt and pepper to taste

Cut short ribs into 1½-inch pieces and season with salt and pepper. Wash potatoes and cut into bite size pieces. Mince garlic cloves and dice the onions. Finally, wash, peel, and cut carrots.

Set Instant Pot to sauté mode. Once hot add in olive oil and short ribs. Cook short ribs in two batches, don't overcrowd the pot. Sear for a few minutes on all sides to brown.

Once seared, remove short ribs to a plate. Add butter to Instant Pot and once melted sauté onions and carrots for a few minutes until softened.

Next add in minced garlic and sauté for a few minutes. Then, add in tomato paste and stir well.

Add in 2 bottles of beer and stir well. Cook down for a few minutes, then add Beef stock, Worcestershire sauce, fresh rosemary, bay leaves, and parsley. Stir well. Finally, add red potatoes to the pot and stir again.

Place your short ribs back into the pot and add the lid. Press the 'stew' or 'pressure cook' button and cook on high pressure for 35 minutes. Once done, let natural release for 15 minutes. Serve and enjoy!
